I have a friend that's Pagan, and recently I just took on the challenge of converting her to Christianity. I don't have all the answers to the questions she asks, so here I am. I'm also wondering....When did Jesus die the second time?

Jesus didn't die a second time. He died on the cross once, because one time was all it took to pay for the sins of anyone who would accept Him. Your friend might be thinking of the second birth, which Jesus didn't do. Thats what we as believers do when we become christians. We die to our old self and are bien again as new people (see john 3). Our they could be thinking of His second coming, which is when He will come back someday as lord over the earth and get His people and judge the world.

Are you thinking of the "second death" which Jesus suffered so we don't have to?
The second death is, by my theology (I'm not trying to claim all Christianity here) the permanent death that is the consequence of sin, not the temporary death that all men experience. This is a decent explanation for what it is, imo: http://mcdonaldroad.org/bible/study/second-d.htm. There will be disagreement on this, though.
Christ experienced the "second death" when He died on the cross. The type of death He experienced was not just the normal type of death we think of, but the experience of complete death (the consequence of sin). So He didn't just die one way, He died in 2 ways.

LOL. Don't worry about taking on the task of converting someone. Just live out the gospel and it will happen naturally. Show people love, and they will want to know where it is coming from. That's when you want to 'convert' them. I used to think of it like this too. That I could live however I want, and then tell people about Jesus one day to 'convert' them. But that's really not how it works. If people see the gospel lived out in front of them they will respond, just keep that in mind. But yeah if you ever have any questions feel free to ask. Not sure exactly what you are asking here though, sorry.

Well you have to do both. You can't try and convert people but not have a close walk with God yourself, because they're not going to understand, like lonehunter said. But you also can't think well I'm showing Gods love to people by the example I set and never look for opportunities to share. You have to pray that God would give you an opportunity. That He would open doors for you and that He would give you the courage to speak the gospel, undiluted. So I give you a big thumbs up:) if God has put that on your heart, then don't ignore it. I encourage you to keep pursuing for this friend, and know we alllllll will be too. God answers the prayers of His people!
