Yeast Conversions

From Fresh Yeast to Active Dry Yeast

To convert from fresh yeast to active dry yeast, multiply the fresh quantity by 0.4. Active dry yeast must be hydrated in warm water before being incorporated into a dough.  (King Arthur Flour)

From Fresh Yeast to Instant Dry Yeast

To convert from fresh yeast to instant dry yeast, multiply the fresh quantity by 0.33. Instant yeast can be incorporated into the dough without first rehydrating. (King Arthur Flour)

From Instant Dry Yeast to Active Dry Yeast

1 teaspoon instant yeast = 1¼ teaspoons active dry yeast.

To convert Instant yeast to active dry yeast in a recipe, multiply the amount of instant yeast by 1.25. You will need to round up figures, sometimes.

From Active Dry Yeast to Instant Yeast

1 teaspoon active dry yeast = ¾ teaspoon instant yeast.

To convert active dry yeast to instant yeast in a recipe, multiply the amount of active dry yeast by 0.75. You will need to round up figures, sometimes.

How many grams in a teaspoon of Instant and active day yeast?

  • 1 teaspoon instant dry yeast = 3.15g
  • 1 teaspoon active dry yeast = 2.83g

Jumbo           Over 70g (2.5oz) Extra Large    63g (2.2oz) to 69g (2.4oz) Large               56g (2 oz) to 62g (2.2oz) Medium          49g (1.7oz) to 55g (1.9oz) Small                48g (1,7oz) and below

  1. Where does dry rapid rise yeast rank with instant and active dry yeast?

    1. Instant yeast is added directly to the flour you do not need to rehydrate it before using. I think dry rapid rise yeast and active dry yeast are the same thing. They are both dry and need to be rehydrated before use. I hope this helps! Happy New Year! Liz
