Chè Khúc Bạch (Pudding Sweet Soup) – Recipe & Video - Lazy Kitchen

Hi guys,

Finally I was able to make an amazing version of “Chè khúc bạch” or Pudding Sweet Soup (I came up with this English name myself, ha!) which my husband could eat one biggggg bowl at a time.

This cool dessert is perfect for every season and is hard to be resisted once you’ve found the right recipe. The challenge is you have to find an aroma that goes well with lychee to add to the soup because I hate the plain flavor of merely sugar and water like what I ate in some restaurants back home. Thank God these tiny bottles of Christmas liqueur I bought at a garage sale turned out to be divine! You might use almond liqueur to substitute for the Apple Cinnamon cream liqueur I used in the video.

*Notes: – When cooking the pudding mixture, be careful not to let it boil or else the gelatin will be spoiled. When you see smoke start to come up from the pudding liquid, it’s time to remove the pan from heat and stir in gelatin. – To set the pudding, normally we use 9-10g gelatin powder or 6 gelatin leaves for each 500ml of liquid.
