Note: A mild honey should be used for this recipe. Honey should not be boiled or it will produce a strong flavor.

Pectin Usage: 2% of total batch weight

Ingredients

  • 34 fl. oz. (50 oz. weight) Mild Honey (warmed to 140-160° F)
  • 1/2 Cup (2 oz. weight) Pacific Pectin Mix
  • 2 Cups (17 oz. weight) Water

Instructions

  1. Pour water into a pot.
  2. Aggressively stir Pacific Pectin mix into water.
  3. Stir while heating mixture to a boil.
  4. Boil for about one minute until pectin dissolves.
  5. Stir warmed honey into pectin solution.
  6. Fill jars.
