In the King's Indian Defence Main Line Exchange variation d4 Nf6 c4 g6 Nc3 Bg7 e4 d6 Nf3 O-O Be2 e5 dxe5 dxe5, Qxd8 Rxd8, why no variation includes Nxe5, it seems to me White has gained a pawn, what should Black do afterwards to regain the pawn, unless there is a trap I don't see. Thanks for asnwering.

Have a look at Nxe4 by black in answer to Nxe5 by white

well, let's say white plays 8.Nxe5, winning a pawn.  Black regains a pawn with 8...Nxe4 because of a discovered attack on white's e5-N with black's g7-B.  Usually, they avoid early exchanges to challenge one another either positionally or theoretically.
