I fell in love with Vietnamese cuisine for its diversity in tastes. It doesn’t make people bored as they use fresh herbs and spices extensively. Beside the use of some common condiments like sugar, vinegar, chilli, lemon, fish sauce etc, Vietnamese cuisine also uses mint, cilantro, lemongrass, star anise and have a selection of sauces, which vary from region to region.

I have been wanting to try MRS PHO for the longest time. The boyfriend is not a huge fan of herbs, so I have to pull my girlfriend for dinner there. Located in a shophouse along Beach Road, the decor is just like any back alley in Vietnam. We were greeted by the Vietnamese servers who took our orders and gave us recommendations.

There is no fusion in the menu, it is just traditional Vietnamese food, just like how Momma used to cook. Sipping a glass of Mrs Pho Summer Ice Tea ($2) which reminded me of longan tea, we began our dinner with a plate of Hanoi meat balls ($3.50) and Vermicelli with Pork and Spring Roll ($7.90). The pork is grilled to tasty slices and once we drizzle the tangy chilli sauce over the noodles, it immediately opens up the palette.

You can’t go wrong with the Phó at Mrs Pho (duh). My favorite is the Special Beef Combo Noodle Soup ($8.90), which comes loaded with slices of fatty brisket, beef round, and some beef balls (freshly shipped from Vietnam weekly). The broth is pleasingly delicate and sweet, with tender beef slices and not too gamey. The garden of fresh herbs that accompany it – basil, cilantro and mint brightens the soup, adding a vibrancy and freshness that make it desirable. If the taste is too earthy for you, squeeze some lime, add a dash of fish sauce and chilli sauce, and it will bring you to another taste profile.

We love it, plus you cannot easily gain weight because of the low fat content in many of the ingredients used in Vietnamese dishes. So my resolution this year, make the boy fall in love with pho so that he can eat this with me! (p/s I will be back to try their cockles!)
