For this example,
(f-g)(x) = (x^2 + 2x - 6) - (x + 5)
(f-g)(x) = x^2 + 2x - x - 6 - 5
(f-g)(x) = x^2 +x -11

The difference between 2 functions is nothing more that subtracting one from the other:
(f - g)(x) = f(x) - g(x) =
x^2 + 2x − 6 - ( x + 5)
x^2 + 2x − 6 - x - 5
x^2 - x - 11
