Using the Smoker Burner and Smoker Box Using the smokerburner intensifiesthe flavor by addingsmoke to the grilling process.The additional smokecreates a"cloud" aroundthe food which permeatesmeats and vegetables for addedsmoky flavor. Inorder to use the smoker box, removethe last set of porcelaingrids and flavor generatorplate on the righthand side of the grill. Set the smokerbox in the openingso that the front and rear tabs rest on thegrill frame. Using WoodChips inSmoker Box:There are manywood chips availableand selection is based on personaltaste. Themost common chips used are mesquiteor hickory. Alwayssoak the chips in waterprior to putting theminto the box. Use the Highposition to start the chips smoking,then reducethe heat to a lower level to preventthem from drying out and flaming.If the wood chips do flameup, add a small amount of water to extinguishthe flame.Use caution whenadding water to a hot box to avoid steam burns.This tray may also be filled with water to producesteam. Whethersmoking or steaming,the grill should remainclosed asmuch as possible to maximizethe effect. Duringextended roastingperiods, it is normalto add fresh woodchips and water to the box several times. Limit the amountof times the canopy is opened.Each peek adds about 15 minutesto the cooking time._1_ CAUTION: Handlethe smoker box withcare.
