Baked Garlic Milkfish - Food Thinkers

1 kg Bangus Fillet1 piece Garlic0.5 cup Soy sauce6 pieces Calamansi1 tsp Black Pepper Crushed30 g Vegetable, Onion Spring3 tbsp Olive oilFor the buttered veggies1 piece Carrot0.5 cup Corn Kernel60 g Dairy, Unsalted Butter1 tsp Sea Salt

Squeeze out the juice from the calamansi, put it in a bowl then add soy sauce and crushed black pepper.
2Marinade the Milkfish (bangus) fillet for 30 mins.
3Preheat Breville Oven under 175 Deg C. place the marinated fish in an oiled baking pan together with 1 head garlic. Drizzle olive oil into the fish and garlic head (make sure you slice the top part of the garlic head) then wrap it with aluminum foil.
4Bake for 30 mins under 175 degrees C.
5While baking prepare the buttered veggies by slicing the carrots into small cubes. In a preheated pan, add the butter, cubed carrots and corn kernels. Sauté for 5 min under medium high heat then season with salt.
6Assembly: Put the buttered veggies into the bottom of a plate, top it with the baked milkfish then garnish it with the baked garlic and sliced spring oinions. Serve!
