Absinthe

A drink made iconic by the Parisian artists and writers of the 19th and 20th century; this vibrant green spirit is one that is as recognisable by its colour as it is by its taste. With tones of sweet fennel and aniseed, this wormwood infused drink is both flavoursome and potent in equal measure.

While an iconic drink of France, its origins were actually from further afield in Switzerland in the 18th century.

It was adopted by the French in the decades after and became part of the Bohemian culture that was booming at the time. While there is many a myth surrounding ‘The Green Fairy’ as some like to call it, it does not have any psychotropic or hallucinogenic properties. Instead, it has a high AVB (often between 45-75%) and an easily sippable flavour.

Serve directly over ice with a dash of sugar syrup or turn up the drama by caramelising a sugar cube before stirring it into the spirit. If you are feeling particularly well-read, why not try Hemmingway’s famous ‘Death in the Afternoon’ cocktail of Absinthe mixed with Champagne. Although, his advice to ‘Drink three to five of these slowly’ should be observed with caution!
