It is a push-me, pull-you effect of the various herbs, as some are of a heightening effect, and others are lowering. The effect on the individual is subjective, and can best be described as a kind of heightened clarity of mind and vision, mildly ponderous and sparkling, and warmed by the effect of the alcohol. Same may even call it absinthe hallucination. This seems to wear off after 20 or 30 minutes, leaving one with an alcohol buzz. Usually, 2-3 glasses of absinthe drink seems to do the trick. More than that, depending on the proof of the absinthe alcohol, absinthe will just make you very drunk.
Does absinthe age, and will aging improve the flavour?Yes, the best, distilled absinthes age very well... we have tasted several that are almost 100 years old and are outstanding. We are still researching what exactly happens to the plant distillates as they age in the alcohol solution. The aging process, though important for high-proof spirits directly after distillation, is not something normally taken into consideration once they have been bottled. It is commonly believed that almost all spirits stop aging once they are placed into glass bottles, but this is not the case with distilled absinthe and a close cousin, Chartreuse. The changes will be rather subtle over a short period of a few months - this time typically improves absinthe by mellowing the alcohol bite, eliminating the 'still-shock' which can hamper the aromas and flavours and allows the herbal components to integrate even more. The color will usually become a lighter green, in some cases, more yellow-green and very old absinthes can take on an amber tint with green reflections. Clear absinthes will not change colour, however, there may be some white sediment found at the bottom of the bottle.
Should I place absinthe in a decanter to aerate it and will an opened bottle lose its quality and flavor very quickly, or will it keep for a week or two?Aeration will improve the taste and aromas as it disperses the high alcohol vapors and allows other aromas to surface. An opened bottle can remain good for years, in fact in most cases it will improve. However, if you plan to keep it for more than six months, it is best that it not remain in a decanter or a half empty bottle with a great deal of surface exposure to air.
Should I refrigerate absinthe? Should absinthe be chilled?Absinthe should never be refrigerated as it contains anethole from anise, and anethole can start to crystallize at less than 68 °F - this crystallization is a major reason why absinthe turns milky when cold water is added. If bottled absinthe becomes very cold, as in lengthy exposure to freezing temperatures, it can cause tiny 'flakes' to appear and hamper its aromas and flavour. The flakes will normally dissolve once the absinthe warms up and they will not cause a permanent adverse effect.
What is the best temperature to store the absinthe? Should it be kept like a wine in a cellar or at cellar temperatures?Absinthe is a high-proof alcoholic spirit and as such is not anywhere near as fragile as wine.
It will be best stored at cellar temperature (+/- 55°F) but ambient/room temperature is fine, as long as it is not too hot. Absinthe should be kept out of direct sunlight and upright, as the high degree of alcohol can have an adverse effect on the cork. You can store it anywhere that you comfortably store other spirits.
Oak aged absinthe, good thing or bad thing?Several absinthes are now available that make a virtue of being ‘oak aged’. It is worth considering why certain spirits are matured in wood and others generally aren’t. The traditionally aged spirits are pot distilled spirits such as rum, whiskey and brandy. The distilled spirit is generally raw and needs a degree of ageing to smooth it out. The spirit will absorb flavours from the wood, whether new or used and increased ageing is universally seen as a good thing, as reflected in the pricers commanded by aged spirits. However absinthe is made from rectified spirits and the alcohol is as smooth as it gets. Then the distiller goes to a good deal of trouble to select the freshest herbs and blends them just so to give a product that can be consumed immediately, just like gin (some distillers are oak-ageing gin now, but that is a new trend). Historically absinthe was not aged in barrel, it was stored in wooden casks for sure, but these were of such a size that the wood imparted no flavour. So why age absinthe?
What is the traditional method of preparing & drinking absinthe?First, you pour roughly three ounces of absinthe into a heavy parfait-style stemmed glass. A perforated absinthe spoon (sometimes very elaborately so) is set upon the rim of the glass and on the spoon is placed a cube of sugar. Ice-cold water is ever so slowly dripped from a glass carafe designed specifically for that purpose, onto the cube. The sugar dissolves and you continue pouring until the ratio of absinthe to water is about two to five parts, depending upon your taste and fortitude. The emerald green absinthe releases a floral bouquet and clouds into a pale opalescent green or yellow right before your eyes, filling you with a sense of creation and mystery. Give the mix a spin with the spoon and drink like you dripped - slowly.With regards to Absinthe King and Absinthe King Gold, please don't consume herbs. Carefully strain and pour into a glass. Absinthe is best served well chilled with a little water and sugar.

The reason is quite simple in fact. Bohemian absinthe recipes have always meant that less anise is used in local absinthe production, thus the majority of our products don't "louche" when water is added. A whole range of Absinthe Original turns slightly cloudy, however, they do not get strong milky opalescence (louche). It has no influence on quality whatsoever. Generally, French or Spanish absinthes are much sweeter, therefore, they turn more opaque when you add water.All of the absinthe products available on our website are genuine articles produced in the Czech Republic and all of them contain many herbal extracts including the psychoactive thujone. Some of them contain an only small amount of thujone (Staroplzenecky Absinthe - 9mg) and some have the highest level available on the market, such as Absinthe Original Bitter Spirit and Absinthe King of Spirits Gold. Wormwood is a very bitter herb, are your absinthes bitter?Whilst our absinthes are completely unsweetened they are in no way what should be considered unpleasantly 'bitter'. The distillation process separates most of the bitter components from wormwood and leaves them in the still, only the aromatic compounds find their way into the final distillate. Anise seed contributes to the 'body' of absinthe which people can also perceive as sweetness.
Why is sugar added to absinthe?Some people just have a sweet tooth, in 19th century France it was common to add sugar to absinthe and other high-alcohol spirits and the 'sugar ritual' became a part of the enjoyment of the drink. Excess sugar can contribute 'body', mask high alcohol and also help hide defects in poorly made absinthes, which is why many poorly-made absinthes have sugar added in the bottle. None of our absinthes have added sugar. In fact the addition of sugar changes the character of the drink considerably; we recommend tasting our absinthes with and without sugar to appreciate the difference.
Why the different spelling of Absinth / Absinthe / Absenth / Absenta?This is quite simply a language difference. Although 'absinthe' is the generic spelling as coined by the Swiss and French, who were the original absinthe producing nations, you will find that around the world there are many different spellings for the word absinthe. In the Czech Republic 'e' is dropped, and thus, absinth. The Spanish say absenta and the Italians say assenzio, but they all mean absinthe. Absenth does not mean anything, it is just an incorrect spelling.
What is the difference between an absinthe 'verte' or 'blanche'?'Verte', or green absinthe gets it's colour by infusing plants in the scented alcohol distillate after the distillation. The plants used in this step vary and each will add flavour as well as colour. Colouration is a very skilled process (this is mostly why the majority of absinthes today are artificially coloured), if the distillate stays in contact with the botanicals for too long the flavour balance along with the colouration of the absinthe can be spoilt. The natural colour can also change and develop as the absinthe ages, most taking on a yellow-green or 'dead-leaf' colour. The colouring step may also create a slight deposit which can be found in the bottom of the bottle - this is not a defect, moreso a sign of quality, natural manufacture. Absinthe 'blanche', white or colourless absinthe, known as 'la Bleue' in Switzerland, is distilled and then left without a colouring step. It will not necessarily be the same as an uncoloured absinthe verte though - to add complexity without colour, there are usually more plants used when distilling a blanche.
