They recommend to not rinse your pasta after cooking unless you plan to make a cold salad because the starch that is on the drained pasta is what makes your sauce adhere to the pasta.Here is a link that has information from a pasta making company on how to cook their pasta:www.delallo.com/.../

This is used with a strainer or as much water pour off as you can if strainer is not available. Recipes do not usually tell you how much water; they usually just say a large pot of water so you have to guess what they mean by a large pot of water.Advertisement
I believe they mean to have enough water that noodles move around freely (have lots of room to move) and it is best to have too much (can you get too much?) than too little. Just be sure the water will not overflow.
The average pasta pot size is between 6 and 8 quarts, and it should be filled about 3/4 of the way or about 4-5 quarts with water for 1 pound of pasta.
Follow your recipe for how long to cook as that will vary according to what you will be making with your pasta.Just be sure your noodles are moving freely.
