Ingredients You'll Need

  • All-purpose flour
  • Salt
  • Granulated sugar
  • Baking powder
  • Eggs- beaten.
  • Milk- any milk you prefer. I used whole milk.
  • Heavy cream
  • Butter- melted.
  • Corn- canned corn rinsed and drained.
  • Oil- for frying.

How To Make Corn FRITTERS

Step 1: Prepare The Batter

First, take out a large bowl, add the flour, salt, sugar, and baking powder, and whisk everything until well combined.

Then, take out another bowl, and whisk together the egg, milk, heavy cream, and shortening.

Pour the wet mixture into the bowl of dry ingredients and mix them together with a rubber spatula until a batter-like consistency form.

Next, fold in the drained corn kernels until just combined with the batter, and then refrigerate this corn mixture for 1 hour.

Step 2: Fry The Corn

After an hour, take out a large deep skillet or a deep fryer if you have one. Now, add the oil to whatever you're using and heat it until it reaches 350°F (175°C). If you're using a large pot, make sure to add enough oil to submerge the corn nuggets fully.

Once the oil is hot, use a cookie scooper or spoon to scoop about 1-2 tablespoon-sized of the corn mixture into the oil. Flip the nuggets occasionally to ensure even cooking and fry until the deep fried corn nuggets are golden brown.

Step 3: Serve

After they are deep fried and golden brown, add them to a large plate or baking sheet lined with paper towels to remove excess grease. Cool for a minute, then enjoy warm.

How To Store Corn Fritters

In the fridge: Transfer the cooked corn nuggets to an airtight container, and you can keep them in the fridge for 3 days.

In the freezer: Put the leftovers in a freezer-safe bag and store in the freezer for up to 3 months.

Reheating: Warm at 375°F in the oven for 10-15 minutes or in the air fryer for 5 minutes or until thoroughly heated. Do not microwave them or they'll get soggy. Add more cooking time for frozen corn nuggets.
