Slow Cooker Garlic Herb Potatoes

These slow-cooker potatoes are the perfect side dish for the holidays. Tender potatoes, thrown into a slow cooker with a dash of olive oil and herbs, and… that’s it. Yup. Couldn’t be easier.

I was skeptical that potatoes would taste good in a slow cooker. I wanted to come up with a simple side dish that would get us through big cooking holidays where the oven is in use for other recipes.

As a bonus, these slow cooker potatoes are for times when we don’t really want to cook and times when you want to use your slow cooker, but not for soup.

These crockpot potatoes are customizable for whatever flavor profile you’d like. I’m partial to herbs and garlic, but they taste fantastic with curry powder, paprika, or chili powder. If it tastes good on a potato, it will work in this dish.

Which potatoes work best?

I chose fingerling potatoes for this recipe, but any small potato will work. Fingerling potatoes are one of my favorite potato varieties with their delicate yellow skin and warm yellow center. Red potatoes, little potatoes, and gold potatoes will also work.

This varietal delivers a rich and authentic potato flavor – earthy with a natural nutty finish. The taste is full and sumptuous, requiring little seasoning or embellishment. Perfect for these slow cooker potatoes! They really don’t need much.

Ingredients for Slow-Cooker Potatoes

Simple and easy to prepare, these crockpot potatoes only require a handful of ingredients.

  • Potatoes of choice
  • Olive oil
  • Garlic Cloves
  • Dried herbs like oregano, basil, and dill
  • Salt and freshly ground black pepper
  • Fresh lemon juice

How to Make Garlic Herb Slow Cooker Potatoes

Prepare Your Slow Cooker

To prevent sticking, lightly coat the inside of a slow cooker with nonstick spray. Place the potatoes, olive oil, garlic, herbs, and salt/pepper into the pot. For a richer taste, you can substitute melted butter, regular or non-dairy, instead of olive oil. 

Cook Until Tender

Stir together, then cover and cook on low heat for 4 to 5 hours or on high heat for 2 to 3 hours, until potatoes are fork-tender. 

Season and Serve

Just before serving, add lemon juice and toss until combined. For an extra hit of umami flavor, my husband loves to sprinkle parmesan cheese on these potatoes while warm. Dairy-free parmesan cheese can also be used.

Can I use fresh herbs?

Dried herbs are more convenient and cost-effective, which is why I call for them here. However, you can substitute fresh herbs if you’d like. You can also swap in different herbs, like rosemary or Italian seasoning if you’d like.

Stove Top Directions

These potatoes are best suited for a slow cooker but can be made on the stovetop as well. Because they’ll need more moisture, you’ll need to add vegetable broth to the potatoes.

Combine all ingredients as directed, along with a cup of vegetable broth. Cover and simmer over low heat until potatoes are tender, about 15-20 minutes. As needed, add more broth to prevent the potatoes from sticking to the bottom of the pain.

Can I make these in the Instant Pot?

These herb potatoes don’t work as well in the Instant Pot as they get too mushy. For Instant Pot potatoes, I recommend my Instant Pot Mashed Potatoes instead. Ready in just 15 minutes!

  • 4 cloves garlic, minced
  • 1 teaspoon each: dried oregano, dried basil, dried dill

  • 1/2 teaspoon freshly ground black pepper
  • Approximately 1/2 a lemon, juiced

Instructions
