- This potato recipe simply uses a combination of olive oil, spices, and herbs to create a seasoned side for just about any main entrée.
- You won’t need to watch the oven to have toasty potatoes. With the slow cooker, the moisture will also stay trapped during cooking so you don’t have to worry about wrapping them in aluminum foil.
- With a mild potato variety, you can switch up the seasonings to complement any meal. Serve as a side dish for breakfast, lunch, or dinner!
Ingredients Needed
- Baby Dutch potatoes – I used Dutch baby yellow potatoes which are similar to Yukon gold potatoes. You can change the variety by choosing a waxy type – usually they will be a red or yellow potato!
- Olive oil – Olive oil will create a smooth coating that will lightly crisp the potato skin and help the seasonings adhere.
- Salt and pepper – Salt and pepper keeps it simple! Choose a coarse ground pepper, sea salt, or Himalayan salt for some added texture.
- Dill – Dill is an herb that works well with salty seasoning blends. It’s especially delicious with chicken or fish and root veggies.
- Dried parsley (optional) – Use a bit of dried parsley for garnish after the potatoes have finished cooking.

How To Make Slow Cooker Potatoes
- Wash and dry the potatoes. (If the potatoes are small, they can be added whole to the slow cooker. If they are larger potatoes, cut them in half or quarters.)

- Toss with olive oil, salt, pepper, and dill.

- Cover and cook on high for 2-4 hours or low for 5-8 hours. (The range in cooking times is provided to accommodate the wide range of potato sizes. The smaller they are, the faster they will cook.)

- Garnish the potatoes with dried or fresh parsley, if desired.
Recipe Substitutions and Variations
Customize this recipe to make an easy side dish that works with just about any set of flavors!
If you want to change the type of potato, choose another waxy variety. Waxy potatoes are a group that contains less starch and are generally more firm. They hold up well for roasting or serving on their own and won’t turn mushy in the proper amount of cooking time.
Other waxy varieties include Yukon Gold, some fingerlings, and round Red Bliss potatoes. It’s important to choose the right type of potato for the specific dish that you want to cook. Read more about potato types and how to cook them.
Also, change up this recipe with a unique combination of seasonings! Not only can you change the types of herbs you use (such as thyme or rosemary), but you can also use seasoning blends. Try one of my homemade blends for variation!

What To Serve Slow Cooker Potatoes With
Herbed baby potatoes will be delicious with just about any main meal. You can serve for breakfast alongside bacon and eggs or meal prep with a protein and a veggie for easy lunches.
Some of the best entrées for roasted baby potatoes are Roast Beef with Rosemary and Garlic, turkey meatloaf, or Beer Glazed Brisket In The Slow Cooker.
Serve some Oven Roasted Carrots and a salad for a delicious homemade meal!

Storing and Reheating
I absolutely love potatoes as leftovers! Save them in the fridge for up to 3 days.
You can reheat them in the microwave or, my favorite method, chop them into bite-sized pieces and sauté them with a little bit of olive oil or butter in a skillet.
Potatoes will not freeze very well since they will discolor, and the texture can change when defrosting.

Notes
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or a skillet with butter or oil.
- If the potatoes are small, add them whole to the slow cooker. If they are larger, cut them in half or quarters for even cooking.
- Choose your preferred seasoning blend or another waxy variety of potatoes.
- I don’t recommend slicing the potatoes in advance since they will turn brown.

- What is the best kind of potato to cook in the slow cooker? Waxy potatoes (versus starchy potatoes) work the best for this type of recipe since they will hold their shape well in the slow cooker.
- Can fresh herbs be used for this recipe? I recommend using dried herbs for the extended cooking time in the slow cooker. However, you can always garnish the finished potatoes with some fresh herbs!
- Will potatoes cook in a slow cooker without liquid? You do not need to add any liquid to the slow cooker – the potatoes will cook to just the right tenderness. You will need to keep an eye on them after a couple of hours to ensure that the potatoes don’t burn around the sides of the pot.
- Can potatoes be overcooked in the slow cooker? Potatoes can be overcooked if left in the slow cooker on any heat setting for too long. Once they have reached the right tenderness and can be easily pierced with a fork, turn off the heat setting or remove the potatoes from the slow cooker.
- Can this recipe be made in the Instant Pot? Herbed baby potatoes can also be made in the Instant Pot!
- Prepare the potatoes with oil and seasonings and place them in a steamer basket.
- Add 1 cup of water to the bottom of the pot.
- Cook on high pressure for 3 minutes and allow a natural release for 10 minutes.

I had no idea that my slow cooker on high could actually do such a good job on roasting mini potatoes! I was using one-bite potatoes, cooked them for one hour on high and about an hour and a half on low. They were still sizzling when I took them out, and they were delicious. Cutting them in the garlic, salt and pepper, and herbs was a great touch.this recipe is a definite keeper.

It may take a little longer but it will mostly depend on the size of your potatoes and how full your slow cooker is.

ReplyFantastic! I used 1/2 tsp Rosemary, 1/2 tsp thyme for herbs and also added 3 cloves of fresh garlic, peeled and crushed slightly. Over the moon!!!

Thanks for the recipe. 5 months into a full kitchen remodel, so the crockpot has been used extensively. I just wish I could have found your blog sooner. This is super simple, has great taste! I have made it a few times now and for a little kick have even added fresh garlic and parm cheese in the end! Looking forward to trying more sides
