For a leaner lasagna, reduce the cheese in the recipe and stuff your noodles with spinach, broccoli, carrots and other vegetables instead of calorie-dense beef or sausage.

A recipe for three-cheese lasagna with Italian sausage, provided by Epicurious, contains 848 calories per one-eighth of a 9-by-13-inch casserole. A vegan lasagna recipe from Vegetarian Times, which uses vegan sausage and vegan cream cheese as well as tofu and spinach, contains just 508 calories in the same serving. If you need cheese in your lasagna but don't want the calorie overload, try using nonfat ricotta and reduced-fat mozzarella.
