    I used to know how to do this, but I can't remember and can't find a tutorial. I recall being able to keep a water channel level using signs, past the 7 block water flow limit. Can anyone link to a youtube/article that shows how to keep water flowing horizontally without dropping down a level?

    You can't. An individual water source will always flow a maximum of 7 blocks on the same y-level, for a grand total of 8 blocks of water (1 source + 7 flows). If you want a longer, continuous flow, you either have to drop the 7th flow block down 1 level, in which case you can extend the flow by an additional 8 blocks.

    You can, however, chain separate water flows together with just a single dry block between them. You do this by placing a sign 1 block above the last water flow block, a second sign 1 block forward of the last water flow block, and a second water source on top of the lower sign. The signs will prevent the second water source from flowing into the previous flow, and since the flow is dropping down 1 level it will then flow 8 more blocks. If you're transporting mobs, then that's all you need to do as mobs will end up jumping into the second water source and start swimming...which with their forward momentum will cause them to clip into the flow and continue being transported. If you're sending items down the stream, however, then you need to replace the blocks the water and items are flowing across with ice blocks. This is because items do not travel fast enough across dirt/stone/etc to make it into the next water stream and will get stuck on the dry parts of the channel.
