Keto Cobb Salad - Low Carb & Sugar Free

The contrast between crunchy romaine, crispy bacon, creamy blue cheese and avocado, and a delicious sweet heat dressing in this Keto Cobb Salad is enough to swoon over. The dressing is the star of the show, bringing everything together with a zippy, refreshing punch.

Anyone who knows me well knows that I am crazy about salads. 

One of my favorite salads has always been the Cobb Salad at the Brown Derby in Orlando.

While most of it is keto-friendly, I am relatively sure that the dressing has sugar in it.

This Keto Chicken Cobb Salad tips its hat to the traditional while staying sugar-free, low-carb, and keto-friendly.

This isn't your typical side salad, but rather a meal all its own.

Low Carb Cobb Salad Ingredients

  • Vinegar:  I used red wine vinegar, but unseasoned rice wine vinegar or apple cider vinegar works as well.
  • Lemon Juice: Freshly squeezed lemon juice is best. For an extra pop of lemon flavor, you can also add in the zest.
  • Dijon Mustard:  If you prefer, grainy brown mustard may be used.
  • Garlic:  Fresh minced garlic is best, but garlic powder may also be used.
  • Sweetener:  I used Swerve confectioners. Taste the dressing and adjust the sweetness to your liking.
  • Crushed Red Pepper Flakes:  This adds a subtle heat. Omit if you do not care for heat.
  • Salt and Pepper:  I used ½ teaspoon salt and ¼ teaspoon of black pepper. Adjust to your personal preference.
  • Olive Oil:  A good quality extra-virgin olive oil is excellent here.
  • Romaine:  You can save time by buying pre-washed and chopped.
  • Grilled Chicken:  You can pick up a chicken at the grocery store or use this Keto Grilled Chicken recipe. (This air fryer chicken is good too.) I like chicken breasts, but thighs will work too.
  • Hard-Boiled Eggs:  You can use the method for hard-boiled eggs from this Keto Deviled Egg recipe.
  • Avocado:  If you are making this ahead of time, make sure you wait until just before serving to add the avocado.
  • Tomatoes:  I used plum, but any type you like works here. Cherry tomatoes are a great option.
  • Blue Cheese:  I find that buying a block and crumbling it myself yields the best flavor, but pre-crumbled works if you are short on time.

Low Carb Cobb Salad Variations:

  • Serve with diced turkey or salmon instead of the chicken.
  • Use a low carb french dressing or Keto Ranch Dressing in place of the Vinaigrette.
  • Use spinach or spring mix in place of the romaine.
  • Add in a handful of chopped chives and parsley.

Keto Cobb Salad Recipe Variations

You can store the salad un-tossed in the refrigerator for up to two days without the avocado.  

The dressing will keep for up to one week.

Ingredients

Dressing

  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 teaspoon minced garlic
  • 1 teaspoon Swerve
  • ½ teaspoon crushed red pepper flakes
  • Salt and Pepper to taste
  • cup extra virgin olive oil

Salad

  • 1 head romaine lettuce torn or shredded
  • 16 ounces chicken grilled
  • 8 ounces bacon cooked and chopped
  • 3 large Hard-Boiled Eggs
  • 1 avocado peeled, pitted and diced
  • 2 plum tomatoes diced
  • cup blue cheese crumbled

Instructions

  • Make the dressing by combining vinegar, lemon juice, dijon mustard, garlic, crushed red pepper flakes, sweetener of choice, salt, and pepper in a blender, food processor, or jar. Mix until combined. Add in oil, and shake or blend until emulsified.
  • Place lettuce in a large bowl. Top with chicken, bacon, eggs, avocado, tomatoes, and blue cheese.
  • Toss the salad with the desired amount of dressing. Season to taste with salt and pepper and serve.
