These low calorie pancakes are soft, fluffy, and perfectly thick. And they seriously taste like "regular" pancakes, but each one of these healthy pancakes has just 99 calories!

The Best Low Calorie Pancakes

Typically pancakes don't make the cut when you're looking for a low calorie breakfast. They're usually loaded with calories, carbs, and sugar.

But with this healthy pancake recipe, you can enjoy some soft and fluffy pancakes without all of the calories and sugar!

Oh, and without all the gluten, too, so these are gluten free pancakes as well.

Also, to make them even better, I suggest loading them up with this 0 calorie maple syrup. The syrup really takes these hotcakes over the top, and you'd never guess it was sugar/calorie free.

By the way, another reason to love this low calorie pancake recipe is that it's super easy to make. 5-10 minutes is all it takes to make 'em. Not too shabby eh?

Ingredients

  • Egg- I used a large egg.
  • Granulated erythritol- or the sugar substitute of your choice.
  • Vanilla extract- for a delicious flavor.
  • Greek yogurt- adds a little protein and makes the pancakes extra fluffy.
  • Oat flour- you can use normal flour in place of the oat flour. But the reason I like to use oat flour is that it's more satiating and higher in fiber than normal flour, so it will keep you fuller for longer! How To Make Low Calorie Pancakes

Before we get cooking, this recipe will make 4 small pancakes - some people call these half dollar pancakes.

So, if you're planning to make them for your family, you should double or triple the recipe. It's impossible to eat just one of these, and since they're so low in calories, you can eat a few guilt-free!

Step 1: Making The Pancake Batter

To start, combine the egg, erythritol, and vanilla extract in a bowl and whisk until they're creamy.

Next, add in the oat flour and greek yogurt and mix everything together until they combine and a smooth pancake batter forms.

Step 2: Cooking the Pancakes

Now take out a non-stick pan or griddle and grease it with a little cooking spray. Also, be sure to turn the heat down to low-medium, you don't want it to be too hot or the pancakes will cook super fast. Patience is key here.

Now, once the surface is heated, pour some batter onto it. Cook the pancakes for a few minutes or until the bubbles on the surface just start to pop.

Then, flip, and cook for another minute on the other side - or until the pancakes are nice and golden.

After you cook about four pancakes, serve with my sugar free maple syrup I mentioned earlier or whatever toppings you want and enjoy!

How I Recommend Storing and Reheating These Pancakes

Let's face it, it's going to be pretty much impossible not to gobble up all of these pancakes as soon as they make their way out of the pan! And you totally can since all 4 pancakes have just 156 calories in total!

But, if you have any leftovers, you can either wrap them in tin foil or transfer them to a sealed bag with the air squeezed out and store them in the fridge for up to 3 days. To keep for longer, wrap the pancakes in plastic wrap and store them in a freezer-safe bag in the freezer for up to 3 months.

My favorite way to reheat the pancakes is to microwave them for about 10 seconds on each side. It warms them up and makes them nice and soft.
