Ingredients You Need for Mazapán de Cacahuate: Mexican Peanut Marzipan [Vegan, Gluten-Free]

  • 3 1/2 cups toasted unsalted peanuts, skins removed
  • 2 1/2 cups confectioner's sugar

How to Prepare Mazapán de Cacahuate: Mexican Peanut Marzipan [Vegan, Gluten-Free]

  1. In a food processor, grind the peanuts until finely ground. Add the confectioner’s sugar and continue mixing. You need to scrape the sides of the bowl occasionally.
  2. The peanuts will release their oil and a compact paste will be formed. You will know it’s ready when you press the paste between your fingers and it sticks together. Be patient because it will take a while, between 10-15 minutes.
  3. Press the paste into a circular cookie cutter until compact. Carefully remove the cookie cutter and repeat until all the paste is used up.
  4. Wrap each mazapán in tissue or wax paper.
