It symbolizes abundance and prosperity.A meaningful phrase my family would say while passing out red envelopes (lì xì) was: I wish you good health, happiness and that things will go according to your will. 1 WHOLE CHICKEN1 TSP SALT + EXTRA TO CLEAN1 THUMB SIZED PIECE OF GINGER1 WHITE ONIONKAFFIR LIME LEAVESWATER—Dipping SauceSALTPEPPERLIME WEDGES

Instructions

Scrub chicken with salt all over to clean then rinse.Peel onion and slice in half. Slice skin off ginger. Place these in the cavity of the chicken.Add chicken to a large pot and fill with water until chicken is covered. Add 1 tsp of salt. Bring to a boil and simmer on medium low covered for 30 minutes.Remove chicken and place in an ice bath until cooled. Chop the chicken and top with thinly sliced kifer lime leaves. Strain the broth and serve on the side with rice and the dipping sauce.
