The Axe in Minecraft is a tool that is used to quickly chop down trees or destroy various other wooden items. Axes can be crafted from Wood, Cobblestone, Iron Ingots, Gold Ingots or Diamond. Gold is the quickest at chopping or destroying wooden items, but is the least durable. Diamond is extremely durable and the second quickest.

Axes are of course intended to be used on wooden objects: they are the go-to tool for cutting down Trees, and are equally effective at destroying other wooden objects like Chests, Crafting Tables, Barrels, Fences, Planks, Bookshelves and more. They are also quite effective on large plants like Melons, Pumpkins, and Mushroom Blocks. Finally, Axes can also be used to strip the bark off of Wood blocks, and remove a layer of wax applied to a Copper Block.

Axes are typically available in the Bonus Chest at the start of a game if you enabled that feature, as well as at Igloos, Woodland Mansions, Ocean Ruins, Ruined Portals and Bastion Remnants. They also have a small chance to be dropped by Vindicators and Zombified Piglins if they were wielding one. Toolsmith and Weaponsmith Villagers may also trade for one, and in the Java Edition they may gift you an Axe if you defended their Village from a Pillager Raid in the last 40 minutes.

Axes are actually better than Swords as weapons from a pure damage-per-hit perspective, however the wait time after each swing means the total damage over time is lower. As such, Axes should only be used on mobs that can be killed by them in a single hit.
