The secret is to coat the frog with a thin layer of flour before frying, resulting in a succulent texture and unbelievable flavor. Within less than 30 minutes, you’ll be serving up a plate of tender and flavorful frog legs.

The texture is similar to chicken meat but so much tender. They taste like a cross between chicken and fish.
Tips and Tricks
- For best results, ensure the oil stays at a steady temperature so your frog legs can cook evenly.
- Don’t overcook your fried frogs, otherwise, they’ll be too chewy.
- Be sure not to overcrowd the pan when frying.

- ▢ 1 pound frog legs
- ▢ 3/4 cup all-purpose flour
- ▢ 1/2 teaspoon baking powder
- ▢ 1/2 teaspoon dry oregano
- ▢ 1/2 teaspoon freshly ground black pepper
- ▢ 1/4 teaspoon cayenne pepper
- ▢ vegetable oil for frying
Instructions
Coat the Frog Legs
- Clean the frog legs and pat dry with paper towels.
- Whisk together the all-purpose flour, baking powder, dry oregano, ground black pepper, and cayenne in a large bowl.
- Toss the frog legs in the flour mixture. Coat evenly.
Fry the Frog Legs
- Add 4-inches of oil to a small pot over medium-high heat. Heat the oil to 350°F. If you don’t have a candy thermometer, you can test your oil by sprinkling some flour. If it starts bubbling and it’s ready.
- Once the oil is ready, gently add a few frog legs to the oil using a pair of kitchen tongs. Fry for about 3 minutes or until golden brown.
- Remove the frog legs from the oil and place them onto the paper towel on top of a wire rack. Season with salt immediately. Repeat for the rest of the frog legs. Serve with lemon wedges and enjoy!
Notes
- Make sure the oil temperature stays between 300-350˚ F. The temperature may drop slightly after you add the frog legs, so adjust the heat accordingly.
