Why I love this bison burger recipe
Grilling season is here again, and to me, there’s nothing better than a perfectly grilled burger. But, not just any burger will do. It has to be seasoned properly and made with quality meat.
My favorite way to season a burger is fairly simple though. They really just need the right amount of salt, but I love to add mustard, garlic and Worcestershire sauce for a little extra flavor pop. It’s my go-to for all types of burgers and I just love the combination. Feel free to switch it up though and use what you like.

Here’s what you’ll need to make it
- Mixing bowl
- Measuring spoons
- Meat thermometer
- Grill spatula

How to make bison burgers
Season the meat. In a large mixing bowl, season the ground bison with coarse salt, garlic, yellow mustard and Worcestershire sauce. Use clean hands to mix the meat until it’s evenly combined. Try your best not to over mix it though, or you’ll end up with tough burgers.
Shape the burgers. Portion the meat into 1/4 pound sections and shape into patties.
Grill the burgers. Preheat your grill to high heat. When the grill is hot, add the burgers and cook for 5 – 6 minutes per side, turning once. Remove the burgers from the grill and check to make sure they have reached your desired temperature.

FAQS and tips for making bison burgers
How should bison burger be cooked?
The USDA recommends cooking ground bison to 160˚F (well-done). If you prefer your burgers less done, it’s recommended that you cook them to a minimum of 145˚F for medium-rare.
Does bison taste like beef?
Yes and no. It does have a similar flavor profile to beef, but there are definitely some differences. Bison tends to be leaner and a little bit lighter in flavor than beef. If you haven’t tried bison, you should definitely try it for yourself to see if you like it.
Can you mix bison and ground beef?
Yes. If you don’t have enough ground bison to make this recipe, feel free to mix ground beef with it. This is a great way to lower the cost of your bison burgers, too, since bison tends to be pricier than beef.
What color is bison when cooked?
Compared to beef, bison is a little bit more red when fully cooked. It doesn’t get as “gray” as beef, but if you’re going for well done, the burgers probably won’t look pink on the inside (we normally go for medium with burgers, which means there’s a little bit of pink still). I recommend using a meat thermometer to determine if your burgers are cooked properly.

- 2 pounds ground bison
- 1 1/2 teaspoons Worcestershire sauce
- 4 teaspoons mustard
- 1/2 teaspoon ground garlic
- 1 1/2 teaspoons coarse salt
Instructions
- Preheat grill to medium-high heat (about 400˚F).
- In a large mixing bowl, gently mix burger ingredients until combined. Shape into 1/4 pound patties.
- Grill burgers for 5 – 6 minutes per side or until internal temperature reaches a minimum of 145˚F (160˚F for well done).
- Remove from grill and immediately serve with your favorite burger toppings.
