Irish Potatoes are made with sweet cream cheese and coconut! They’re a lightened up version of a favorite St. Patrick’s Day treat!!

I am in it to win it this year, guys. I’m kind of rocking St. Patty’s Day. Aaaand it all started with these perfect little Irish potatoes.

Growing up I remember eating these throughout the whole month of March. I mean, why not?! This year, I was kind of dreading making them because the classic recipe calls for lots of confectioner’s sugar and I wanted to keep things refined sugar free.

Ok, for anyone interested in fun facts, read on. Wiki  says Irish potatoes are a Philly tradition! My whole life I thought everyone was enjoying these and I imagined surely the Pine Nut’s news feed would be flooded with Irish potato candy recipes.

Turns out, the rest of the country – no, world! – has been unexposed and deprived of this tasty treat. Anyway, I am delighted to be the person that brings joy to the world through these coconutty cinna bundles.

Skinny Irish Potatoes

Ingredients for Irish Potatoes

  • salted butter
  • cream cheese
  • vanilla extract
  • agave nectar
  • unsweetened shredded coconut
  • cinnamon

How to Make Irish Potatoes

  1. Mix all ingredients except cinnamon.
  2. Chill for 30 minutes – 1 hour.
  3. With your hands, roll into balls the size of a large marble.
  4. Then, place the cinnamon in a shallow bowl and roll each ball to coat it with the cinnamon.

  • 1 teaspoon vanilla extract

  • 7 oz. unsweetened shredded coconut
  • 2 tablespoons cinnamon

Instructions

  1. Mix all ingredients except cinnamon.

Tips

  • If you only have unsalted butter, add 1/2 teaspoon of salt to the mixture.
