Incorporating Irish potatoes in my diet is a tradition I’ve kept up with for a long period of time. To me, this is a clean getaway from the usual carbohydrate sources like rice and yams. It’s rich in complex carbohydrates , High in dietary fiber and a very good source of vitamin B6, Vitamin C, Manganese, Copper, phosphorus, niacin and minerals such as potassium, magnesium and iron. It’s also a versatile dish which could be eaten with almost anything. I had mine with Tomato egg Sauce, But this was because i ran out of fish to make Smoked fish stir fry. It could also go well with Beef stew or Chicken curry (Veggie chicken gravy), Barbecued fish, the list is endless. Ingredients::: • 600g Irish Potatoes • 1 tsp Curry powder • 1 tsp Thyme • 1 tsp Salt • Vegetable Oil for frying Directions::: Step 1: Peel the skin of the potatoes and wash

Step 2: Cut the potatoes into chunks

Step 3: Place the potatoes in a medium sized pot, Add the thyme, Curry powder, Salt and Water just enough to cover the contents of the pot.

Step 4: Leave to cook for 10 mins till soft then drain and discard the liquid used in boiling the potatoes

Step 5: Pre-Heat the vegetable oil on low heat in a frying pan for about 2 mins. Gently add the potatoes but don’t stir. Leave it to fry for about 4 mins on each side till it dries up and becomes crispy on the outside before removing from the frying pan.

Step 6: Drain on a Wired sieve and serve with Tomato egg Sauce, Ketchup or any other sauce e.t.c

  • I make this dish a little bit differently, by boiling whole, peeled irish potatoes in meat stock, before deep frying. The crunchy exterior of the potatoes and all that yummy softness inside each is a perfect combination 🙂

  • it sure does…lol! But in the end, it ends up just right. Very little would be consumed since the boiling liquid would be discarded before frying. Less salt makes it taste bland.

  • Could you pls do a post on Potato salad? I have forgetten how to make Yam balls, can you help out with that as well? Is it also possible to interchange potato for the yam, when making Yam balls? I am not talking about Ojojo (balls made from water yam) This snack is made with regular yam. I grew up eating it, but it's been years since I came across it, and I would like to give it a try myself.
