Strength

In his fight against Cronos, Kratos catched Cronos' hand when he tried to crush him with a clap.

Also, during a flashback of the Great War between Olympians vs Titans, it was seen Hades using his hooks against Cronos and was about to rip his soul but was stopped by Atlas. Then with help of Poseidon, Hades ripped Atlas' soul. When Kratos fought Hades and he tried to rip his soul, he put more resistance than Cronos did and was able to overpower Hades' grip, unlike Cronos who needed the help of Atlas to escape. Cronos was stated by a worker of game to be a close match to Atlas' strength. Atlas is strong enough to hold the Earth's crust. The crust represents 0.5-0.4% of Earth's mass, which is 6×10^21 tons. This means Kratos' strength should be around 30-24 quintillion tons, that's around 1/3 the mass of the moon.

Not to mention GOW world contains a Mount Olympus way bigger than the one in real life. It's said that it takes 3 days to fall from the top to the bottom. Using a terminal velocity of 195 km/hr, Olympus must be 14,040,000 m tall.

Assuming this is a somewhat accurate (not completely) depiction of GOW's Olympus, I can get it's volume with the conic volume formula 1/3*ab*h

V=1/3π*(4,026,176.47)²*14,040,000

V=2.3833×10^20 m³

Assuming Olympus is made of granite, which has a density of 2,700 kg/m³, this means Olympus weights 6.4349×10^23 kg or 643.49 quintillion tons.

In comparison, the moon has a mass of 7.342×10^22 kg or 73.42 quintillion tons and Earth weights 6×10^24 kg or 6 sextillion tons. Mount Olympus is almost 9 times heavier than the moon and has a mass equivalent to 10.7249% of the Earth.

Add also the raised oceans from Poseidon's death:

Atlas was supporting 4.0156554×10^24 kg or 4 sextillion metric tons. That's about 2/3 of the Earth's mass!

Atlas seemed to be of the same size as Cronos, so I can get the potential energy he holds with the formula Mgh = PE:

(4.0156554×10^24 kg)(9.81 m/s²)(784 m) = 3.088×10^28 J

At the end of GOW3, Kratos is capable of defeating the top tiers like Poseidon, Hades and Zeus, who are atleast around the same level as Atlas.

Speed

With the Boots of Hermes, he could move as fast as the god of the same name. Hermes could run from the Labyrinth (which resides in the center of Mount Olympus) to the chamber of the Flame of Olympus (almost at the top). As GOW's Mount Olympus is 14,040 km tall and assuming it took him 60 seconds:

(7,020 km)÷(60 s) = 117,000 m/s = Mach 344.1

This could be an underestimation as even other gods and even non-god tiers such as Poseidon's Hypocampus could rise to Olympus in much shorter amounts of time, and Hermes is portrayed as the fastest being in GOW.

Kratos could fight against Poseidon's Hypocampus and even Poseidon himself. The Hypocampus were able to go from the base of Mount Olympus to Gaia's location (who was almost reaching the top of Olympus) in about 4 seconds. I already found Olympus' height as 14,040 km. Even assuming it only covered half of Olympus' height, the Hypocampus was moving at 1755 km/s, thats Mach 5,161.76, and Kratos could react to a surprise attack from the Hypocampus. Kratos also defeated Poseidon, who was also able to fly down Mount Olympus in a short amount of time.

He can even keep up with Zeus, who in GOW 2, flew from Rhodes to an arena on the top of Mount Olympus in about 10 second. In real life, both locations are 653.77 km apart. Thinking of the distance covered as the hypotenuse of a triangle (h=14,040 km b=653.77 km), the distace covered was 14,055.213 km. This means Zeus could fly at 1405.52 km/s or Mach 4133.886, just slightly faster than a lightning's leader's highest measured speed (1400 km/s). Kratos could react to Zeus flying towards him and was able to continuosly blitz him.

Also, Zeus' lightning has proved to be faster than real lightning. In the novel he could throw his lightning from Greece all the way to Egypt (1,596 km) in what is described as an "instant", likely meaning 1 second. But also consider Zeus was in Mount Olympus at the time. Using the same method from above (h=14,040 km b=1,596 km), the distance covered was 14,130.42 km, so the lightning was moving at Mach 41,560.

Zeus could react to and dodge his own lightning when reflected back at him multiple times.

Durability

Catching Cronos' clap was durability feat (I already calced it up there). Kratos has survived a point-blank volcanic eruption that sunk Atlantis, more especificly the Mount Thera's eruption, recorded to have released 7,500 Megatons of TNT, and even then this could still be a low-end considering that the eruption sank Atlantis, which is likely to be a continent. This happens before the events of GOW 2 and 3, where Kratos is clearly more powerful.

Kratos has even taken punches from the god of strength Hercules while he was wearing the Nemean Cestus. At one point, Hercules mentioned that one of his labors was to search an apple. This is a reference to one of Hercules' labors in RL greek mythology, where he had to take Atlas' place in his burden of holding the heavens so Atlas could take the apples of the Hesperides for him. This means that GOW's world Hercules had to take Atlas' place in holding the surface world (which I also measured up there). But even with the Nemean Cestus increasing his strength, Kratos was still able to shrug off his attack and ultimately defeat him.

His stamina is also unbelievable, as he was able to fight non-stop in numerous occasions for very prolonged periods of time without rest, like in GOW3 where he fought enemy after enemy, fighting against god after god and titan after titan without stopping.
