Potato wedges are a popular addition to many recipes. They cook faster than whole potatoes and offer a variety of recipe options for combining with meats and other vegetables. By cutting potatoes into wedges, the potato has more surfaces to absorb seasonings. Additional surfaces also allow better crisping of baked or fried potatoes. Uneven wedges do not cook evenly and can result in unsatisfactory recipes. By properly cutting potatoes into evenly sized wedges, you will attain even cooking, whether pan frying, baking or roasting.

Step 1

Wash potatoes in warm water before cutting to remove dirt. Scrub with a vegetable brush if needed.

Peel the potato if desired and place it on a sturdy cutting board.

Cut the potato lengthwise down the center with a sharp paring knife.

Place each half facedown on the cutting board.

Step 5

Cut lengthwise down the center of each half to create four large wedges.

Step 6

Arrange the four large wedges lengthwise on the cutting board, with the wide side on the right if you are right-handed, and on the left if you are left-handed.

Hold the knife at a 45-degree angle against the wide side of one large wedge and cut lengthwise through to the cutting board.

Step 8

Repeat for each of the other large wedges to create eight medium wedges.

Tip

Turning the wedges in the same direction makes cutting with your favored hand easier than switching the angle of your hand from right to left, and helps assure equally sized wedges.

Use a sharp knife to ensure a clean cut.

Remove any bruises or eyes from the potatoes before cutting.
